Hello all! 🙂 I have a new recipe here for you that I absolutely loved! It wasn’t a difficult recipe to cook and did not take long at all to cook either. I hope you’ll give it a try and let me know what you think!
Lime Cliantro Chicken Burritos with Rice and Black Beans
–2 to 3 tablespoons fresh lime juice
-1/3 cup bottled lime juice
-1/3 cup honey
-3 tablespoons olive oil
-1/2 teaspoon salt
-1/2 teaspoon pepper
-1/4 teaspoon cayenne pepper
-1 pound boneless, skinless chicken breasts (diced)
-about 8 ounces cooked brown rice
-1 cup canned corn
-3/4 cup red bell or green pepper
-3/4 cup fresh cilantro leaves
-large tortilla shells or salad mix/lettuce of choice
1. Add fresh lime juice, bottled lime juice, honey, 2 tablespoons olive oil, pepper, salt, and cayenne pepper into a medium sized bowl and whisk mixture together. Set aside.
2. In a large pan or skillet, add 1 tablespoon of olive oil and heat on medium heat for 1 minute. Add chicken and season with salt and pepper. Cook chicken over medium/high heat for about 5 minutes.
3. Add the sauce to the pan with chicken. The mixture may bubble up (be careful!). Allow mixture to boil for about 4 minutes. Stir mixture and flip chicken as sauce boils.
4. Turn the heat to low and add the rice, black beans, corn, peppers, and cilantro. Stir mixture thoroughly and evenly until mixture is heated well. Put mixture in tortilla shell or on a bed of lettuce and enjoy!

I love this recipe so much! It is easy and it gave us plenty of leftovers for a few days. We also added hot sauce to our burritos because we love hot sauce so much. If you love Chipotle or Qdoba burritos, this is a fantastic alternative to try at home! I hope you’ll enjoy this recipe as much as I did!
